Keep it legal.  The Alcohol and Tobacco Tax and Trade Bureau of the US
Treasury Department governs the taxation of alcohol.  It was formerly called the
"Bureau of Alcohol, Tobacco and Firearms (ATF)."
(In short, a single adult can produce up to 100 gallons/year; 2 or more adults in a
household can produce up to 200 gallons/year.  Such products cannot be sold or
offered for sale.  An "adult" is a minimum of 18 years of age or older if defined by
your state.  In Texas, an adult is 21 years old or more.)
